Recipe of the Week: Feta Sun-dried Tomato & Edamame Salad

I am not sure about you but this scorching hot weather has been making me reach for cold and refreshing foods over these last few weeks.

Any occasion to skip out on turning on the stove or oven, I’ll take it!

Without complicating it too much and using simple ingredients to get a smashing combination of flavours, I put together this delicious salad and thought it would be worth sharing with you.

It took me all of about five minutes to put together – keeping in mind I had already prepared a large pot of pearl spelt, ready to go. Otherwise it would have taken a total of ten minutes, just what we want, right?

As the kids are home for the summer, the days are hot, we want to maximise our time outdoors and we likely want to limit the use of heat-generating kitchen appliances, this can be an easy go-to!

Nutritionally this recipe offers a very well balanced meal composition that will keep you satisfied for a fabulous and productive day, too!

The feta and edamame beans lend to great protein sources, the spelt offers a wholegrain carbohydrate option essential to energise our bodies and act as a fantastic source of fibre. The lettuce, tomatoes and cucumber are an excellent source of vitamins, minerals, antioxidants, water AND fibre. A great recipe to get in your #5aday!

WHAT YOU WILL NEED:

  • 2 handfuls of your favourite salad base (lamb’s lettuce, watercress, rocket, romaine… take your pick!)
  • 1/3 cup pearl spelt, cooked
  • ¼ cup edamame beans
  • 4-5 sun-dried tomatoes
  • 1/6 cucumber, chopped
  • 50g feta, crumbled
  • Olive oil to drizzle (~1 tbsp)
  • Splash of balsamic vinegar
  • Fresh basil to garnish
  • Salt to taste

METHOD

  • Place lettuce on the bottom of a medium size bowl and top with spelt, edamame beans, sun-dried tomatoes, cucumber and feta. Drizzle with olive oil and balsamic vinegar and add fresh basil to garnish and salt to taste.

Tah-dah! That’s it!

I have also tried making this recipe with couscous ,which is a great and simple replacement for the pearl spelt. It is also a great way to limit using the stove-top. All you will need is to boil the kettle instead and follow the instructions on the package. It usually takes about three minutes for couscous to cook – an easy win!
